Is a hoop house worth building, or is it a big plastic tent that overheats by noon and freezes by midnight? Both, depending on how you run it. A single layer of plastic buys you surprisingly little on a cold night. Add a second layer over the beds and the numbers change completely.
What Is a Hoop House and How Much Warmer Is It?
A hoop house is an unheated tunnel of curved bows under one layer of greenhouse plastic, and on a winter night it holds only a few degrees over the outside air. The gain comes by day and from what you put inside.
Utah State University Extension puts it plainly: even well ventilated, a high tunnel runs 10°F to 15°F (6°C to 8°C) warmer by day, while at night it "may vary by just a few degrees warmer." In January it can hit 100°F (38°C) at midday and near 0°F (-18°C) after dark.
Commercial growers say high tunnel, gardeners say hoop house, and USDA NRCS treats them as one thing. Why This Works: Catch and Store Energy
A hoop house does not make heat. It slows the loss of heat the soil banked during the day, and each layer adds a still-air gap that slows it further. Permaculture calls this catching and storing energy, and it is why the soil mass inside matters more than the plastic above it. Purdue notes that condensation on the inner cover improves night insulation by trapping radiant heat off the soil, an "igloo effect" you get for free.
How Do You Build a Home-Scale Hoop House?

Full sun, nothing shading the south and west sides, and soil that drains. In midwinter a tree casts a midday shadow 2.25 times its height, per Purdue, so keep well clear. Run the long axis east-west north of about 40°N to catch low winter sun, north-south further south.
Set the bows
Drive 18 in (45 cm) rebar or ground posts 12 in deep, 4 ft (1.2 m) apart for PVC and up to 5 ft for bent steel conduit, and slide the bows on. Coleman suggests twice the hoops where snow load is expected.
Add a ridge purlin and baseboards
A pipe along the top locks the bows against wind. Baseboards at ground level and a hip board at knee height give you something to fasten plastic to and let the sides roll up.
Cover on a calm, warm day
Use 6 mil UV-stabilised greenhouse film, not construction plastic, which cracks in a season. Pull it tight when warm so it does not sag when cold. Wiggle wire in aluminium channel on the hip boards gives a drum-tight, re-openable fit. USU rates greenhouse film at 5 to 6 years.
For a few beds a cold frame is cheaper; for serious winter production a walipini is the heavy-duty answer. A hoop house sits between them.

West Virginia Extension's crop list ranks spinach and curly kale as the winter workhorses. Swiss chard dies below 15°F (-9°C), so treat it as a fall crop. Mature lettuce is "difficult to overwinter"; sow it small in October and let it sit for March, as Coleman does. Put tall kale on the north side so it does not shade the rest.
