You dumped a mower bag of fresh clippings on the compost heap. Four days later it smells like a drain and the middle has gone into a warm grey slime that will not break apart. Nothing is wrong with the clippings. Everything is wrong with the geometry.
Fresh grass is roughly 80 to 85 percent water by weight, and the pieces are short, flat and soft. Pile them and they lock together like wet paper, squeezing out the air spaces that aerobic microbes need. Once oxygen runs out, a different crew takes over and produces ammonia and hydrogen sulphide instead of compost.

Two to three inches at a time, always with a brown. Missouri Extension is specific about this: materials that mat, clippings above all, should go in at 2 to 3 inches maximum unless you mix them with something coarser as they go in.
The ratio matters as much as the depth. Extension composting guides converge on a pile carbon-to-nitrogen ratio of 25:1 to 30:1. Clippings sit at 12:1 to 25:1 and dry leaves at about 50:1, so two parts clippings to one part leaves lands almost exactly on 30:1. Equal parts gets you to about 35:1, which still works fine.
Stockpile browns before you need them
Bag or bin dry autumn leaves and keep them next to the compost. Without a brown supply you will always be tempted to dump clippings on their own.
Add in 2 to 3 inch layers, alternating
Clippings, then a thicker layer of shredded leaves or straw, then clippings. Shredded leaves are stiffer and hold open the air channels that clippings collapse.
Squeeze-test the moisture
Target 45 to 60 percent. A handful should feel moist and hold together with no water squeezing out. Above roughly 65 percent, oxygen disappears and ammonia starts.
Turn every 3 to 4 days while it is hot
Oklahoma State Extension notes that piles turned every three to four days process considerably faster than unturned piles. A working pile runs 135 to 140F in the core.

Adding water to a slimy pile. If it already smells of ammonia the problem is too much moisture and too little air, not too little water. Fork it apart, mix in a generous volume of dry browns, and rebuild it looser. The smell usually clears within a day.
Why This Works: Stacking Wastes
The autumn pile solves itself if you let two waste streams meet. Leaves are all carbon and structure with no nitrogen. Clippings are all nitrogen and moisture with no structure. Each is a nuisance alone and neither needs anything bought in. That pairing of complementary outputs is the whole logic behind a chop-and-drop system: the waste of one part of the garden is the input for another.
About 1 inch, and dry them first. This is where most gardeners overshoot. Missouri Extension advises building clipping mulch up gradually to a 1-inch layer using dry grass, warning that greater thickness blocks moisture and oxygen from reaching the soil and can produce heat and foul odours.
That is much thinner than general mulch advice. Iowa State Extension puts organic mulch generally at 2 to 4 inches, with coarse materials like wood chips at the top of that range and fine materials at the bottom. Clippings are the finest common mulch there is, so they belong at the very bottom of the range, applied in thin repeat doses rather than one deep load.
Drying is the other half. Iowa State specifically recommends letting clippings dry before applying them, because fresh ones mat and smell. Spread a bag out on a driveway or tarp for a day and they lose enough water to behave like a fibrous mulch instead of a poultice.

Because clippings break down fast, they suit annual vegetable beds and short-season crops rather than permanent plantings. For paths and perennials you want something slower, which is where wood chip mulch or a proper fall mulch layer does better work.

The US Composting Council states these persistent herbicides can last anywhere from several months to three or more years depending on temperature, moisture and microbial activity. Tomatoes, beans, peas and potatoes are the crops that show it first, with cupped, twisted, fern-like new growth.
You do not need a lab. The National Pesticide Information Center recommends a simple bioassay: sow peas, beans or a few tomato seedlings into pots of the suspect material alongside identical pots of known clean soil, then watch for three to four weeks.
