You dig a hole, drop in your kitchen scraps, and fill it back in. That is the whole method. No bin to buy, no pile to turn, no ratio to calculate. Fifteen minutes a week and the scraps go straight into the ground where the roots are.
It is not new. Burying organic waste to build soil is one of the oldest agricultural practices we have evidence for, and the trade-off has always been the same: almost no labor, in exchange for patience. Fairfax Gardening's guide tells you to check the pit after about six months. Illinois Extension, describing the same principle at trench scale, says a year, because limited oxygen slows the process.
Compare that to a managed hot pile at 140 °F finishing in three to four months and it looks slow. Then compare the work: turning a pile weekly versus digging one hole and walking away.

Width is set by your household, not by a rule. Fairfax estimates two adults generate about the volume of two one-gallon milk jugs of vegetable scraps a week, which a hole roughly 12 to 18 inches across will take comfortably. This is also the point where pit composting parts company with trench composting, which digs a long channel between beds, usually 12 to 18 inches deep and wide, and folds into a bed rotation.
Plants, and not much else. Fairfax limits pit inputs to vegetable and fruit peelings, eggshells and coffee grounds. Alexandria's backyard guidance goes further and lists what should never go in a home system at all: meat, bones, fish, oil and fat, pet or human waste, weeds gone to seed, and diseased plants.
The reasoning is straightforward for pits specifically. A cool pit never reaches pathogen-killing temperature, so anything carrying disease or viable weed seed stays viable. Fats and animal protein decompose slowly and anaerobically, which is exactly how you get odour and a raccoon problem.
Common Mistake to Avoid
Planting straight over a fresh pit. Illinois Extension is explicit: avoid planting in that spot for a year, because nitrogen available to plants may be limited while the buried material decomposes. Microbes breaking down carbon-rich material pull nitrogen out of the surrounding soil to do it. Put the pit where nothing is growing this season, or accept a stunted crop above it.
Chop everything. Particle size does more for decomposition speed than anything else you control. NC State Extension recommends reducing material to pieces smaller than two inches, which in a pit is easily done with the edge of the shovel before you backfill. It is the difference between six months and eighteen.
A rough balance helps too. NC State puts the ideal carbon-to-nitrogen ratio at 25:1 to 35:1, and a pit of nothing but wet food scraps sits well below that. Pick a spot nothing is growing in
Fallow bed, the gap between perennials, a future planting area. Keep it clear of tree trunks, at least 6 feet from the house or wooden structures per NC State's compost siting advice, and out of any low spot where water pools.
Dig 12 inches, pile the soil to one side
A round-point shovel or post-hole digger is enough. Keep the excavated soil in a neat heap beside the hole so backfilling takes seconds. Roughly 12 to 18 inches across handles a week of scraps for two people.
Add scraps to 4-6 inches, chop, add browns
Tip the bucket in, chop through it with the shovel blade, then scatter a couple of handfuls of dry leaves or shredded cardboard on top. Do not exceed about half the pit depth or you will not have room for proper cover.
Backfill, tamp, mark the edge
Return all the soil, press it down with your boot, and put a stick or stone at the edge. Next week's hole goes right beside it. Come back in six months with a trowel and see what is left.
Why This Works: Feeding the Soil, Not the Plant
Conventional gardening feeds plants directly. Permaculture feeds the organisms that feed the plants, and burying raw organic matter is about as direct a version of that as exists. USDA NRCS notes that raising soil organic matter improves infiltration and water-holding capacity, so crops better withstand drought. You are not adding fertilizer. You are building the sponge that holds it.
Yes, though the most famous example is more contested than the gardening internet suggests. Amazonian dark earths, the terras pretas, are deep black soils rich in charcoal and organic residue that sit in patches across the Amazon basin and have long been read as the accumulated refuse of pre-Columbian settlements. Repeated burial of organic waste, over centuries, produced soil that still outperforms the surrounding ground.
The honest version is more interesting. Research reported by Revista Pesquisa FAPESP describes radiocarbon dating at Caldeirão in the central Amazon where a dark earth carbon sample came back at roughly 6,300 years before present, with some work suggesting formation around 7,600 years ago, apparently predating settlement evidence at that site by about a thousand years. At other sites, such as Teotônio near Porto Velho, dark earths dated to around 5,000 years ago are clearly associated with human activity.
So: humans certainly built some of these soils by burying organic waste, and some deposits may have other origins. What survives either way is the mechanism. Concentrated organic matter, buried and left, becomes durable fertility. That is the same thing happening in your 12-inch hole, just on a timescale you can watch. There is a modern argument too. EPA's 2023 analysis estimates that about 62.5 million short tons of food waste went to US landfills in 2020, producing roughly 55 million metric tons of CO2-equivalent methane, around 58 percent of fugitive methane from municipal landfills. A hundred gallons of household scraps a year is not going to move that number. It is still the right place for them.
Six months to a year for chopped vegetable scraps, depending on soil temperature, moisture and particle size. Fairfax Gardening suggests digging in with a trowel at six months to check for dark, crumbly humus; if recognisable scraps remain, cover it back up and wait longer. Illinois Extension's estimate for buried material is about a year, because limited oxygen slows everything down. Eggshells will still be recognisable, and that is fine.
Yes, and pit composting is the simplest way to do it. All you need is a shovel and somewhere to dig. It handles all the plant-based scraps a household produces, costs nothing, and needs no turning, monitoring or moisture management. The limitations are real though: it is slow, it will not process large volumes of yard waste, and it cannot handle diseased material. For that you need a hot pile.
Not if you cover properly and stick to plant material. Oregon State Extension specifically recommends 8 inches of soil cover to discourage dogs, cats and other animals from digging. Fairfax adds that vegetative scraps do not attract animals strongly and suggests a capsaicin-based deterrent or pepper-water spray on the surface if you have persistent visitors. Meat, fish, dairy and oils are what bring the trouble, which is why every extension source excludes them.
The digging does, until the ground freezes. Decomposition slows to almost nothing at low soil temperatures and resumes in spring, so a pit filled in November is really a pit that starts working in March. Oregon State's trench version deliberately uses this rhythm, packing trenches with leaves and debris in autumn and turning the results onto beds in spring. Different, not worse. You lose the ability to spread finished compost where you want it, and you lose the pathogen and weed-seed kill that comes with 140 to 160 °F. What you gain is nutrients released slowly and exactly where roots will find them, plus zero handling losses. University of Missouri Extension's compost guidance gives a sense of the scale involved: an inch of compost at 1 percent nitrogen supplies roughly 4.4 pounds of available nitrogen per 1,000 square feet over a year. Slow release is the point, not a compromise.
