Companion Planting Tomatillos: A Salsa Garden That Works
You planted one tomatillo. It grew four feet tall, flowered beautifully, and filled itself with papery lanterns. You opened one in September and found nothing inside but air.
That is not bad luck or bad soil. Tomatillos are self-incompatible, which is a botanist's way of saying a plant cannot fertilize itself. You need at least two. Once you know that, the rest of the salsa garden almost designs itself, because everything that goes into salsa verde wants the same conditions and the same bed.

Why Does One Tomatillo Plant Give You Empty Husks?
Tomatillo (Physalis philadelphica) runs a gametophytic self-incompatibility system. Its own pollen germinates on its own stigma, then stalls before fertilization ever completes. The plant still builds the husk around the unfertilized ovary, which is why you get a full-size lantern with nothing in it.
Utah State University Extension puts it plainly: tomatillos are not self-fruitful, so always plant at least two, same variety or different. North Carolina Cooperative Extension agrees, noting they prefer to cross-pollinate and need at least two plants for good fruit set.
There is a wrinkle worth knowing. Research on Physalis philadelphica reproductive traits has documented variation in self-compatibility across genotypes, so the occasional single plant does set fruit. You have no way to tell which one you bought. Two plants is the floor; three or four is insurance against the small chance that your two share incompatible alleles.
Spacing matters less than proximity. USU recommends transplants 2 ft (60 cm) apart in rows spaced 3 ft (90 cm), or hills 24-36 in (60-90 cm) apart. Bees cross those distances without noticing. What breaks pollination is putting one tomatillo by the shed and another by the fence.
Why This Works: A Guild Is About Relationships, Not Just Neighbors
Permaculture calls a deliberate grouping of mutually supporting plants a guild. Most guild writing focuses on perennials, but a salsa bed is a legitimate annual guild, and the tomatillo pair is its clearest example: two plants that produce nothing alone and plenty together. That is a functional relationship, not a proximity rule. It is the same thinking behind the three sisters, where corn, beans and squash each supply something the others cannot make for themselves.
What Should You Plant With Tomatillos?
Honest framing first. Companion planting claims fall into three buckets: things with experimental support, things resting on sound horticultural logic like shared water and light needs, and things that are pure folklore repeated until they sound official. Most tomatillo pairings sit in the middle bucket, and that is fine, as long as nobody pretends otherwise.

The marigold entry deserves the extra line. A review by the Piedmont Master Gardeners found little scientific evidence that marigold scent repels vegetable pests broadly, citing Rutgers work where marigolds failed to repel cabbage, carrot and onion pests. Marigolds also host aphids, Japanese beetles and spider mites themselves. What marigolds genuinely do is suppress root-knot nematodes: research on Tagetes patula shows root-released alpha-terthienyl interferes with nematode egg hatching, and the effect is strongest when marigolds are grown as a preceding crop in that soil, not tucked in as a border afterwards.
How Do You Lay Out a Salsa Garden Bed?
A 4x8 ft (1.2x2.4 m) raised bed holds a working salsa garden. Tomatillos reach 3-4 ft (90-120 cm) tall and just as wide, so they set the geometry and everything else works around them.

Center of the bed so bees moving between them do not have to leave. Stake or cage them. USU notes tomatillos sprawl and benefit from pinching growing tips in tight spaces.
Tomato at the north end, peppers on the sunny side
Tallest plants north so they do not shade the bed. Peppers stay under 3 ft and take the same water schedule as tomatillos.
Onions and garlic along the edges
Upright, narrow and shallow-rooted, so they use the bed perimeter without competing for the space the tomatillos need.
Cilantro in the afternoon shade, resown every 2-3 weeks
Cilantro bolts fast in heat. Oregon State Extension recommends successive sowings at 2-3 week intervals for a continuous leaf harvest. Let one patch flower on purpose.

Letting cilantro bolt is the part most gardeners resist and should not. In a flower-strip trial in organic cabbage, researchers using phacelia, buckwheat, borage and coriander found predator and parasitoid abundance rose significantly as the share of flowers in bloom increased, and adjacent crop plants carried lower pest infestation. The signature one is the three-lined potato beetle. University of Minnesota Extension reports it feeds on tomatillos, eggplant and potatoes, is active May through August, and while usually present in low numbers, it can reach damaging abundance specifically in tomatillo plantings.
Adults are a little over a quarter inch long and feed in groups, but the larvae do the real damage and can strip foliage. They carry their own excrement on their backs, which is unappealing enough that most gardeners find hand-picking into soapy water perfectly tolerable. Ten minutes twice a week through June handles a home-garden population.
Beyond that, tomatillos inherit the whole nightshade pest list. Utah State's Solanaceae pest guide covers aphids, flea beetles, hornworms, thrips, leafhoppers, stink bugs and whiteflies across tomato, pepper, eggplant and tomatillo. Hornworms will find tomatillos as readily as tomatoes.
The Nightshade Crowding Problem
Tomatillo, tomato, pepper, potato and eggplant share pests and pathogens. University of Minnesota Extension documents more than a dozen viruses affecting tomatoes, including tomato mosaic and tobacco mosaic virus, which also infect peppers and potatoes and move on aphids and thrips. Grow them in the same bed if space demands it, but do not pack them shoulder to shoulder, and rotate the whole family out of that bed for three to four years afterward.
When Is a Tomatillo Actually Ripe?
Watch the husk, not the fruit. The husk fills out first, then splits as the fruit swells against it. A tomatillo that has just started to split its husk is ready.
Fruit that stays on past that point turns yellow and sweeter, which some people prefer for eating fresh but which makes duller salsa verde. Green and firm gives you the acidity the sauce is built on. Plants also drop ripe fruit, and windfalls picked up the same day are perfectly good.
Expect 2-3 lb (0.9-1.4 kg) per plant across a season, per NC State, with indeterminate plants flowering and fruiting until frost kills them. Two plants gives a household plenty of salsa. Four gives you a freezer problem, which is the good kind.
Why This Works: Stacking Functions in a Single Bed
Look at what that bed is doing at once: producing every ingredient of one dish, feeding pollinators through the tomatillo and cilantro flowers, hosting parasitoids and hoverflies, and using vertical space from onion tops to staked tomatoes. Stacking functions means asking each element to do more than one job. Permaculture design usually introduces this idea with perennials, but an annual vegetable bed with a real harvest plan is where most gardeners feel it first.
Frequently Asked Questions
Do you need two tomatillo plants to produce fruit?
In almost all cases, yes. Tomatillos run a gametophytic self-incompatibility system, so a plant's own pollen fails to complete fertilization. The plant still inflates the husk, which is why a lone tomatillo produces papery lanterns with nothing inside. Utah State University Extension advises planting at least two, of the same or different varieties. Research has found some genotypes are partly self-compatible, but there is no way to identify those at the garden center, so plant two as a minimum and three or four if you have room.
How close do tomatillos need to be to pollinate?
Closer than most people plant them. Utah State Extension recommends 2 ft (60 cm) between plants within a row and 3 ft (90 cm) between rows, and those distances are well within a bee's normal foraging movement. The failure mode is not distance in inches, it is separation across the garden. Two tomatillos at opposite ends of a plot may never get visited by the same bee on the same trip. Keep them in the same bed so a pollinator naturally moves from one plant's flowers to the other's.
Can you plant tomatillos next to tomatoes?
You can, with a caveat. They share sun, water and feeding needs, so they get along horticulturally. They also share pests and pathogens, including tomato mosaic and tobacco mosaic virus, plus aphids, flea beetles and hornworms. Packing nightshades tightly makes it easier for both to spread. Give them air movement between plants, keep the tomato staked and to the north so it does not shade the tomatillos, and rotate the whole nightshade family out of that bed for three to four years afterward. How big do tomatillo plants get?
Roughly 3-4 ft (90-120 cm) tall and about as wide, according to both Utah State and NC State Extension. They sprawl more than tomatoes do and grow as indeterminates, flowering and fruiting until frost. In a small bed, either cage them like a tomato or pinch the growing tips to keep them contained. Give them full sun and well-drained soil; they perform badly in heavy, waterlogged ground, which makes raised beds or large containers a good fit.
What can you not plant near tomatillos?
There is no plant that chemically harms tomatillos. The practical answer is about competition and disease. Avoid crowding them with other large nightshades, since that concentrates shared pests and viruses. Avoid heavy feeders that will shade a 3-4 ft plant, and avoid siting them where potatoes or tomatoes grew in the last three years. Beyond that, most "never plant this together" lists are folklore. Do marigolds protect a salsa garden?
Partly, and not in the way most people think. There is little evidence that marigold scent repels insect pests from nearby vegetables, and marigolds host aphids, Japanese beetles and spider mites themselves. What holds up is nematode suppression: Tagetes roots release alpha-terthienyl, which disrupts root-knot nematode egg hatching. That effect comes from growing marigolds as a preceding crop in the same soil, not from edging a bed with them. They also earn a place simply as flowers that feed predatory insects.
